[Meat Free January] Grilled cheese from Kappacasein in Borough Market

In the bustling centre of Borough Market's diverse set of stalls, cafes and eateries, Kappacasein dairy offers up a shrine to your guilty cheese worship.

Made up of a combination of three cheeses that fall into royalty category - Ogleshield, Montgomery Cheddar, and Comte - which are all grated, blended together, and piled into a mountain ready for spooning in between two slices of freshly baked Poilâne sourdough bread. This is one mega grilled cheese sandwich.
Added to the cheese mix is a blend of four types of onion - including white, red, and spring. The sourdough is then buttered and pressed under an electric sandwich grill.

The taste is as fantastic and complex as you'd expect from this calibre of ingredient combination. The first hit you get is crunchy and buttery - as well as a sharp hit from the mature cheddar. In the middle of the palate you get the soft sweetness of the onion that complements the nutty Comte, and then a HUGE moreish finish that makes you want to take your next bite.   

Impressively, the cheese filling is completely melted all the way through, and slowly oozes its way out of the centre of the sandwich. Bloody well done, this is an immense grilled cheese sandwich. 
Kappacasein is open in Borough Market from 11am on a Thursday, Friday, and Saturday.
